Pasta Chitarra with zucchini and saffron

Preparation

Cut the zucchini into matchstick size (taking care to remove the most spongy inner parts) and fry quickly in a pan with good butter; after a short firing (zucchini should be “al dente"), season with salt and add Saffron Oil.

With the sauce season the pasta alla chitarra abruzzese and add Parmesan cheese. (you can also use spaghetti and add fresh clams.

To serve with a Trebbiano d´Abruzzo white wine.

Fried Ray fish “alla scapéce”

Preparation

Cut the ray fish into cubes of 7-8 cm, flour it and fry until golden brown; drain on paper towels, season with salt and place in a baking dish in a single layer.

Boil wine vinegar diluted with white wine, salt, add the Saffron Oil and pour over the ray fish; leave to marinate for a few hours in the refrigerator and serve cold as an appetizer.

With the same method you can prepare vegetables in batter fried or grilled.
