Recipes with Porcino Oil
Rabbit and mushrooms
Bone a rabbit of about two kilograms.
Fry in extra virgin olive oil a pound of mixed mushrooms, finely chopped rabbit liver and fresh sausage crumbled, with chopped shallots, garlic, parsley, fennel leaves; salt and pepper. At the end of cooking, add beaten eggs mixed with parmesan cheese ("cace e ova"), a few tablespoons of Porcino Oil, mushrooms and breadcrumbs to get a filling which will fill the rabbit.
Sew and cook very slowly, in a clay pot, occasionally adding a little vegetable broth until it is perfectly browned. Allow to cool a little and cut into slices of about two centimetres.
Penne with mushrooms and vegetables
Cut into cubes mushrooms of various types (mushrooms, chanterelles etc.), Eggplant, zucchini, potatoes and fry them in a pan with extra virgin olive oil, chopped garlic, shallots and green pepper and chopped lard or bacon.
When cooked, flavor with Porcino Oil.
Cook the penne al dente and sauté in a pan with the sauce and a little Parmesan.
Roast bread with fried cheese
Toast the slices of bread, rub with garlic cloves and season with Porcino Oil.
Grill slices of caciotta cheese and add them to the toasted bread.
Serve the bread very hot accompanied by some chestnut honey.
