Tortelli with pumpkin

Preparation

Season the excellent pumpkin tortelli from Reggio Emilia in a pan with freshly heated Orange Oil. Serve with grated parmesan cheese or sprinkle cinnamon powder over the tortelli.

Linguine alla Marinara

Preparation

Make a sauce with extra virgin olive oil, seafood, cubes of monkfish, peeled prawns and fish stock; after cooking slightly thicken with starch. Cook the linguine al dente, drain and pour the sauce over them, stir for a few minutes in the pan and add Orange or Lemon Oil.

Chicken breast

Preparation

Flour slices of chicken breast and fry in a pan with extra virgin olive oil. When almost cooked, add salt, remove from the pan, remove the cooking oil and fry again in the pan for a few minutes using Orange Oil.

Serve with curls of orange peel.

Marinated salmon

Preparation

Cut the two fillets from a Salmon of at least a kilogram, leaving the skin. Cover the fillets with salt and sugar and leave to marinate for five hours in the fridge, lining up the two halves.

Cut the salmon into thin slices and prepare a vinaigrette with a little vinegar, preferably raspberry, and Orange Oil. Pour the sauce over the slices lying in a baking dish and marinate for another two hours, stirring occasionally.

Serve with slices of oranges and the liquid marinade.
