Summer pasta with raw sauce
Chop fresh San Marzano tomatoes and leave them to marinate for a few hours with two cloves of garlic, onion, cut grossly, chopped celery and parsley stems, adding salt, freshly ground pepper and a few tablespoons of extra virgin olive oil.
Add small pieces of fresh cheese or ricotta cheese or feta flakes and a tablespoon of Basil Oil.
Add this raw cold sauce to freshly cooked pasta type "Lumache" or "pipe" and serve warm.
Penne with vegetables
In a large skillet, sauté in olive oil extra virgin various types of chopped vegetables (zucchini, eggplant, peppers, mushrooms, celery, etc.); salt, pepper and flavor with oregano.

Add salt, flour and fry the rolls in boiling hot olive oil extra vergine.
Meanwhile, cut the tomatoes in half and let them drip dry; add a few tablespoons of extra virgin olive oil, salt, pepper, chopped parsley and a tablespoon of basil oil.
Pour the sauce in a pan, along with the rolls; sprinkle with grated sweet pecorino; cover with aluminium foil and put into the oven at 220 ° C for fifteen minutes.
